Mixture: tomatoes ($3.00) + corn ($1.39x 2) + beans ($0.79 cents each) + avocados ($2.29 for 6 mini = 38 cents each) total is $8.12 for the mixture.

Wraps: 6 for $2.29; dressing pricing next= $1.86; sweet potatoes = 2 pounds @ 0.91/pound=$1.82

Chicken: $8.99

Totals: $8.99+ $2.29 + $1.86 + $8.12 + $1.82= $23/08= $2.88 per serving

and honestly, they will still have leftover chicken, oil, spices and salad dressing and likely bean mixture for another meal.

1 Medium Fully Cooked Rotisserie Chicken
2 1lb each Sweet Potatoes
1 Package Taco Wraps
1 small head of Lettuce
2 15oz Cans of Black Beans
2 15oz Cans of Frozen Corn
1 10oz Package of Cherry Tomatoes
2 Limes
2 to 4 oz Olive Oil
2 teaspoon Dried Cilantro
2 teaspoon Cumin
1 teaspoon Skoked Paprika
2 Small Avocados

Directions

1.
Cook Sweet Potatoes

Scrub potatoes with a vegetable brush or soft cloth in cool water. Pierce through the skin in at least 4 places with a fork or knife. Place on a microwave safe dish and cook on high while you are preparing the wraps. Each microwave will vary in terms of the time it will take, but begin with 10 minutes and check for doneness. Doneness is achieved when a knife cuts through the potato without resistance.

Prepare Dressing (if not using store bought)

Squeeze lime into a clear 8oz container. Add 2 times the amount of olive oil as the juice. Add the cilantro, cumin, smoked paprika, Stir with a fork or whisk.

Rinse Lettuce
Rinse lettuce under cold water

Prepare Tomatoes
Rinse cherry tomatoes, slice in half, place into a large bowl.

Add Beans, Corn
Open cans of beans and drain liquid. Then add to bowl of tomatoes. Open cans of corn or bag of frozen corn. If frozen, heat in microwave for a minute or two to defrost. Add corn to bowl with tomatoes and beans.

Combine Items
Add about a third of the dressing, stir. Add to the bowl of tomatoes, beans, corn. Stir again. Taste – add salt if needed – 1/2 tsp at a time.

Plate, Serve, Enjoy
First Preheat each shell on stove in a pan for one minute on high, if desired. Place a flat shell on each plate. Add one piece of lettuce. Spoon on corn, bean, tomato mixture. Add a few pieces of the sliced avocado. Add several pieces of sliced chicken to the top. Add half a sweet potato to each plate. Serve and enjoy.
